One Tree Hill, Politics, and Kittens

We had a potluck and pumpkin carving party with friends tonight, and the main couse was fish. For a side dish, I tried out a new recipe for rice that was super easy and turned out pretty nicely. Because I like to share anything good I find with my friends, I now present you with the recipe for:

Mushroom Rice

Serves: 8
Time to prepare: 5 minutes
Time to cook: 25 minutes

- 2 T butter
- 12 mushrooms, coarsely chopped
- 2 cloves garlic, minced
- 1 bunch green onions, finely chopped
- 4 c chicken broth
- 2 c uncooked white rice
- 1 t snipped parsley
- salt and pepper to taste

Melt butter in saucepan.
Saute mushrooms, garlic, and green onion until mushrooms are cooked.
Stir in chicken broth and rice.
Season with parsley, salt, and pepper.
Reduce heat; cover and simmer until rice is fully cooked and broth is absorbed.

The yummy is done.
